Mint Oreo anything is a good idea, right?
Mint Oreo Cookie Ice Cream
-2 cups heavy cream (divided)
-3/4 cup sugar, slightly heaping
-1/8 tsp salt
-1 cup whole milk
-2 tsp pure Peppermint extract

-Green food coloring, if desired
-24-ish Oreo's, quartered
Combine 1 cup of cream, sugar, and salt in a saucepan over medium heat. Whisk until sugar is completely dissolved. Remove from heat. Stir in second cup of cream, milk, peppermint extract, and a few drops green food coloring if desired. Cover mixture well and refrigerate overnight.

Freeze ice cream in an ice cream maker according to manufacturer's
directions. I use an electric and it takes about 30 minutes. When
done, scoop ice cream into a covered freezer-safe container and fold in
Oreo pieces. Freeze several hours or overnight before serving.
For Peppermint Candy Cane ice cream: Use pink gel food coloring instead of green, lower peppermint extract to 1.5- 1.75 tsp, do not heap sugar, add 1/2 c crushed candy canes after churning. Optional: Add about 10 crushed Oreos as well.
