Although I haven't blogged for awhile, I did do some baking around the holidays and I took photos so I could post them someday. These Krispy Treats were one of my favorite new recipes of the season. Inspired by the Peppermint JoJo's at Trader Joes, they are the perfect holiday treat. Super fast and simple enough that your kids can help you make them.
Peppermint Cookie Krispy Treats
-6 cups Rice Krispies
-25 crushed Peppermint JoJo's, or Candy Cane Oreos
-25 crushed Peppermint JoJo's, or Candy Cane Oreos
-4 Tbsp butter
-4 ounces (24) Candy Cane Hershey's Kisses, unwrapped
-6 cups marshmallows, heaping
-1 tsp vanilla extract
In a large bowl combine the Rice Krispies and Oreos. Set aside.
Melt the butter and Hershey's kisses in a saucepan over LOW heat. Once melted, add the marshmallows. Stir, and cook just until the marshmallows are nearly melted. If you cook the marshmallows too long, or over medium/high heat, your Rice Krispy Treats will be hard and dry.

Remove saucepan from heat, and stir in the vanilla.
Pour melted marshmallow mixture over cereal/Oreo mixture. Stir lightly to combine. Dump into a well-greased 8x8 pan. Press gently into pan, but don't smash them down completely.

Allow to cool before cutting and eating.
Note- If you wanted, you could totally dip the bottom of these in melted chocolate.
