This coffee cake is moist and gooey and has a delicious brown sugar glaze drizzled over the top.
Totally breakfast-worthy.
Gooey Apple Coffee Cake
Recipe from Foodnetwork.com
-1/2 cup butter (1 stick)
-1 1/2 cups packed brown sugar
-2 large eggs
-2 cups flour
-1 teaspoon baking soda
-1 teaspoon cinnamon
-1/2 teaspoon salt
-1 cup sour cream
-1 teaspoon vanilla extract
-2 cups peeled, cored and chopped Braeburn apples (or similar)
Crumble Topping:
-1/2 cup packed brown sugar
-1/2 cup flour
-1/2 teaspoon cinnamon
-4 tablespoons butter, softened
Brown Sugar Glaze:
-1/2 cup packed brown sugar
-1/2 teaspoon vanilla extract
-2 tablespoons water
Preheat the oven to 350 degrees and grease a 9x13 inch baking dish.
-2 cups flour
-1 teaspoon baking soda
-1 teaspoon cinnamon
-1/2 teaspoon salt
-1 cup sour cream
-1 teaspoon vanilla extract
-2 cups peeled, cored and chopped Braeburn apples (or similar)
Crumble Topping:

-1/2 cup flour
-1/2 teaspoon cinnamon
-4 tablespoons butter, softened
Brown Sugar Glaze:
-1/2 cup packed brown sugar
-1/2 teaspoon vanilla extract
-2 tablespoons water
Preheat the oven to 350 degrees and grease a 9x13 inch baking dish.
Cream together 1 stick of butter and the 1 1/2 cups brown sugar until light and fluffy. Add eggs one at a time, beating well after each one.
In a separate bowl whisk together the flour, baking soda, cinnamon, and salt.
Add dry ingredients to the creamed butter mixture, alternating with the sour cream and vanilla.
Fold in chopped apples. Spread into prepared baking pan, spreading to the edges.
To make the crumble topping, combine brown sugar, flour, and cinnamon, and cut in butter with a pastry blender or fork until you have coarse crumbs. Sprinkle over batter in pan.
Bake 35-40 minutes or until golden brown and set. Allow to cool for 10 minutes.
To make the brown sugar glaze, combine brown sugar, vanilla, and water and mix until smooth. Drizzle over cake. Serve warm.
