Pooh Corner Peanut Butter Chocolate-dipped Sandwiches

October always makes me pine for Disneyland. Disneyland is just magical in October, completely decked out for Halloween and full of villains, pumpkins, and yummy treats.

I love Disneyland so much that our retirement plan currently consists of moving to a tiny house near the beach, hubby working the Jungle Cruise, and me working at Marceline's or Pooh Corner (my life's ambition, if we're being honest).

If you don't know these places of which I speak- click the links above.  And get a napkin for your drool.

Since we can't be at Disneyland right this second, I made this copycat of Pooh Corner's Peanut Butter Sandwiches.  I get one of these every time we visit and they are worth the 5 or 6 dollars they cost.

Looking for other Disneyland treats?  Check out these Tigger Tails or these Mickey Pops

Pooh Corner Peanut Butter Chocolate-dipped Sandwiches
Makes 1

-1/4 cup peanut butter
-2 Tbsp powdered sugar
-1/4 tsp vanilla
-2 tsp milk

-2 graham crackers (full sheets), broken in half
-milk chocolate, for dipping
-dark chocolate, for drizzling (optional)

In a small bowl, combine first 4 ingredients until smooth.  Spread mixture over two graham cracker halves and top with other cracker.  Use a small knife to smooth the peanut butter filling along the edges of the cracker.

Freeze filled crackers 15 minutes

Melt chocolate at 50% power in the microwave, stirring every 30 seconds until smooth.  Do not over-heat chocolate!

Place one graham sandwich on a dipping fork and use a large spoon to spoon melted chocolate evenly over the top of the sandwich.  Slide sandwich onto a  parchment-lined cookie sheet and move tray to the refrigerator to set.

Drizzle additional chocolate over the top of each sandwich, if desired.  Place back on the parchment lined tray and move back to the refrigerator to cool completely.

  1. These look really yummy! The Pooh treats must be exclusive to Disneyland as I've never seen them at Disney World. I have the same retirement plan..only hubby and I would have to move to Florida!! If we get to make it to Cali next year, I'll have to look for these. :)
