Coconut Syrup


 A lot of years back, A few years back, when I was in college I went to school in Hawaii for a summer.  You know, taking a serious course-load like Tennis and Principles of Education. (The tests were crossword puzzles.  Yes, there was a word box.  And we got cookies for finishing. Probably the most rigorous semester of my life.) 

Besides for going to the beach everyday, and legitimate Shave Ice, coconut syrup was one of the best things about living there.

Although I haven't found a dead ringer for real Hawaiian coconut syrup, this stuff is pretty darn close. We use it over french toast and pancakes, and I'm sure it would be great on waffles as well.  This is a great way to welcome summer.

Coconut Syrup
Recipe from Cooking a la Mode
-1/2 cup butter (1 stick)
-¾ cup buttermilk
-1 cup sugar
-½ tsp baking soda
-1 tsp coconut extract

In a saucepan, over medium heat, combine butter, buttermilk, and sugar.  Stir until sugar is dissolved and mixture is completely combined.  Bring to a boil and let bubble 1 minute.

Remove pan from heat and add baking soda and coconut extract, stirring constantly. It will bubble up, so be careful!  Allow to rest for several minutes before using.


Note-  I see no reason why you couldn't substitute coconut milk for the buttermilk.  You may just have to boil it a bit longer so it's not too thin.

  2. This is one of my favorite things I miss about living in Hawaii too! I'm so excited to try this recipe out! :) Oh yeah, real shaved ice is the best...the only other place I've found it is at a place called "Bahama Bucks" outside of Dallas. I laughed at my SIL when she told me it had to be like the real Hawaiian stuff...but it totally was. We need one here!
