I'm not really sure if I am qualified to call this ghetto peach cobbler, since I've never actually lived in the ghetto and therefore have no real basis for this assertion, but I think I'm gonna stick with the name anyways.
This cobbler is made from yellow cake mix and peaches so it's not exactly Martha Stewart, but we love it. Part of the attraction is that it comes together in about 5 minutes and we always have the ingredients on hand. Serve warm with a great big scoop of vanilla bean ice cream.
Ghetto Peach Cobber
Recipe adapted from Allrecipes
-Brown sugar (1-2 Tbsp)
-1 box yellow cake mix
-1/2 cup butter
-1/2 tsp cinnamon, optional
Drain the juice from two of the cans of peaches. Dump all 3 cans of peaches into a pan. (9x13 will work, but will be thin, or you can use a smaller pan for a thicker cobbler). Sprinkle a little bit of brown sugar over the peaches.
Pulse the cake mix and butter in a food processor until crumbly and combined. If you don't have a food processor, you can just cut the butter in with a fork or knife until crumbly.
Pour mixture over the top of the peaches. Sprinkle with cinnamon if desired. Bake at 375 degrees for 45 minutes.
*Want to make this with fresh peaches? Just use about 2.5 lb of peaches.
