Valentine's Oreo Truffles

February is here, all my girly pink and red decorations are out, and the sun actually peeked out for approximately six minutes last week.  I am all smiles!  Also one of my dear friends had a little baby girl this weekend, and I have a niece coming any day now.  If the groundhog is correct and Spring is actually on it's way, there are even more reasons to celebrate!

Around these parts, we usually celebrate in the form of chocolatey-goodness.

Oreo truffles are nothing new but I've never actually posted the recipe here.  I figured it was about time.  Also, my husband (who is on Atkins)  is convinced this is the food of the gods.

Oreo Truffles
Recipe from Allrecipes

-36 Oreo cookies
-1 (8 oz.) pkg cream cheese, softened
-High quality chocolate chips, or dark chocolate candy melts (16 oz. should be plenty.  I use Guittard chocolate chips and mix both milk and semisweet.)
-Sprinkles, if desired

Crush Oreo cookies into fine crumbs in a food processor. 

Mix cookie crumbs and cream cheese in an electric mixer until completely combined to a dough-like consistency.

Roll dough into Tbsp-sized balls.  I usually get about 20, but you can get 30-40 if you make them smaller. Refrigerate balls on a cookie sheet for 15 minutes.

Remove cookie sheet from fridge and melt candy melts or chocolate chips in the microwave at 50% power, stirring every 30 seconds, until completely melted.  Do not overheat!

Dip balls in chocolate (I used a chocolate-dipping fork) and place back on the cookie sheet.  Sprinkle with sprinkles immediately, if desired.

Repeat for each truffle.

Refrigerate tray until truffles are set, and store covered in the fridge.
