Rocky Road Caramel Apples


A girl like me can't just make regular old caramel apples for Halloween.  I'm all about the toppings.  How many calories can we load on one apple anyway?  These Reeses apples are my favorites.

This year I made a rocky road version. Totally Disneyland worthy!

Pretend you don't notice I forgot the almonds.



Rocky Road Caramel Apples
-4-5 Granny smith apples
-1 bag Kraft caramels
-popsicle sticks

-3-4 cups milk chocolate chips (good quality like Guittard)
-mini marshmallows
-halved or chopped almonds
-1/4 cup white chocolate chips and 1/4 cup semisweet chocolate chips, for drizzle


Follow the directions in this recipe through the dipping of the apples in the caramel and placing them on a tray to cool completely.  You can speed this by putting them in the freezer for about 15 minutes if you like. 
Melt the milk chocolate chips in the microwave at 50% power, stirring every 30 seconds, until completely melted.  Thin with about 1-2 tsp of vegetable oil to get a good consistency for dipping.
Holding one apple by the stick, use a large serving spoon to quickly spoon melted chocolate over all sides of it.  Allow excess to drip off back into the bowl.  Scrape the bottom really well because chocolate will pool down here.  
Place apple on a tray.  Allow chocolate to set slightly and then press miniature marshmallows and almonds into chocolate.  (If you do this too soon the marshmallows will all slide down to the bottom.) 
Repeat dipping/topping process for each apple.  
Place tray full of dipped apples in the freezer for about 15 minutes until chocolate is completely set. 
Melt white chips and semisweet chips (separately) in the microwave at 50% power until melted, stirring every 30 seconds.  Spoon into two freezer bags, cut off the tips, and use to drizzle vertically over each apple. Move tray back to the freezer to set completely before  serving. 
Store dipped apples in the fridge for 1-2 days.  


The easiest way to eat these is to cut slices off with a large knife!
