These would be a great addition to a Christmas cookie plate. The white chocolate really makes them. They have a nice chewy texture from the coconut. Mine came out a bit flat so I upped the flour 1/4 cup in the recipe below.
Next time I'll try adding some dried cranberry bits too.

PS- You can't really taste the coconut, so if you're looking for a coconutty cookie, this isn't it.
White Chocolate Oatmeal Coconut Chews
Recipe adapted from Lil' Luna
-1 cup butter
-1 cup sugar
-1 cup brown sugar
-2 eggs
-2 tsp vanilla
-1 tsp salt
-1 tsp baking powder
-1 tsp baking soda
-2 1/4 cups flour
-2 cups oatmeal
-1 cup coconut
-1 1/2 cups white chocolate chips
With a a mixer, cream together the butter, sugars, eggs, and vanilla. Set aside.
Whisk together the dry ingredients (everything but the white chips) in a separate bowl.
Add the dry ingredients to wet ingredients and mix until well-combined. Stir in white chocolate chips.
Scoop dough into Tbsp-sized balls and place on a greased cookie sheet. Bake at 350 degrees for 9-10 minutes. Do NOT overbake! (They will continue to bake on the hot cookie sheet, so take them out as soon as they are even slightly golden around the edges. If you overbake them they will be crisp instead of chewy.)
