It wouldn't be summer without some version of S'mores would it? We've had a really hot windy summer and lots of fires so we have been too paranoid to use our firepit much. This is a great solution AND it means you don't even have to sit by a hot fire.

Have a pie.
Mini Smore's Ice Cream Pies
Based on idea from Woman's Day
-Miniature marshmallows
-Mini Graham Cracker crusts in tins (Keebler sells them in a box of 6)
-Hot fudge sauce
-Marshmallow Creme
-Graham crackers/Chocolate for garnish
Place chocolate ice cream in the refrigerator for 30 minutes to soften. Scoop about half a gallon into a bowl and mix in miniature marshmallows to taste. (I'm guessing I used about 1/2 cup but estimation has never been my forte.)
Spoon ice cream/marshmallow mixture into each crust and smooth the top.
Freeze 20 minutes or until firm.
Top with large scoops of chocolate ice cream. Freeze 20 minutes more.
Put hot fudge and marshmallow creme into separate ziploc baggies and cut off the tip of one corner. (If using "hard" hot fudge, heat it a little in the microwave before spooning into the baggie.) Drizzle hot fudge and marshmallow creme over each pie.
Garnish with a graham cracker wedge and piece of chocolate if desired. To serve, just pull down foil pan a bit and the pie will pop right out. Eat with a fork.

This looks too awesome! I've been wanting to post an ice cream theme dessert myself..but first I've got to go find some chocolate ice cream..all of a sudden I'm hungry! Love this great idea.
