Rootbeer Float Freeze


Did you know it's national root beer float day? I have a 4 year old who is in love with all things root beer.  Root beer gum, root beer cupcakes, root beer barrels, and you guessed it- root beer floats.  We like to do a blended freeze version that perfectly combines the root beer and ice cream in every slurp.  It's way easier to eat and less messy for kids.

Yes, we did have these for breakfast today.

Blended Rootbeer Float Freeze
Recipe adapted from: Good Housekeeping
Serves 3-4 (depending on the size of your cups)

-2 cans very cold A&W root beer (almost frozen is great- dump your cans into a covered container and put in the freezer for an hour or so before using.)
-7-8 scoops vanilla ice cream

Scoop root beer and ice cream into a blender and blend until frosty and smooth.

If you have leftovers you can pour the freeze into an ice cube tray and freeze.  When you want to drink it, just put the cubes in a blender with a little bit of extra root beer*.  (Use a small spoon to scoop the cubes out of the tray if needed.)

*If you don't have any extra root beer, just wait for the cubes to melt a bit so you have some liquid in your blender, otherwise your blades will just spin and your blender might overheat.  About half an hour of thawing will do it.
