Raspberry Turnovers


Have you been staying up as late as I have watching the Olympics every night?  I swear I'm a walking zombie these days.  I've been putting milk away in cupboards instead of the fridge and finding my husbands socks with the cleaning supplies.  It's been worth it though.

Gabby Douglas?

ADORABLE.

And know what really weird?  Watching the Olympics and realizing one of your good friends from elementary school thatyoumightatotallyforgottenabout is an Olympian.  And looks exactly the same as she did in 4th grade.


While we're on the topic of the Olympics, I give you these turnovers, also known as:

Breakfast of champions!


Really, I'm pretty sure they probably serve these at the Olympic training center cafeteria. All those swimmer and gymnast guys with 8-packs obviously eat these daily.


These are so easy peasy but people will think you're all fancy for making your own pastries.  Probably your children will fall all over themselves complimenting you on being able to do what the woman at Safeway does.  Feel free not to shatter any of these illusions.


Raspberry Turnovers

This recipe will make 8 turnovers with lots of pie filling left over.  If you buy two packages of puff pastry you can make 16 turnovers and probably still not use all the pie filling.

-1 Pkg. Puff Pastry Sheets (Use Trader Joes or something else that has real butter as an ingredient! The Pepperidge Farm and store brands don't use butter and leave an awful film in your mouth.)
-Comstock Berry Medley Pie Filling (or substitute)
-If desired: egg, water, and sparkling sugar for tops


Thaw puff pastry according to package directions.  Unfold and cut each sheet into four squares by cutting a plus-sign in the dough:

Starting with one square, dip your index finger in a small bowl of water and wet all 4 sides of the square.  (Just trace the outer rim with your finger.) This will make your dough stick together really tightly and keep the filling from spilling out.

Put two tablespoons of pie filling in the middle of the square.
 

Fold dough over into a triangle and press sides together gently.  Use a fork to crimp the edges, then place on baking sheet.

Repeat for each turnover.

If desired, make an egg wash.  (Whisk together 1 egg with 1 Tbsp water.)  Brush mixture on top of each turnover and sprinkle with white sparkling sugar.  (This comes in a bottle by the sprinkles. I used Wilton from Hobby Lobby.)

Bake at 400 degrees for 18 minutes or until golden.
