Nothing says summer like S'mores.
Let's just add a little bit of peanut butter, shall we? :)
Peanut Butter S'more Bars
Recipe adapted from Idle Wife
For Crust:
-1 1/2 cups graham cracker crumbs
-3 tablespoons sugar (less if you are sensitive to sweet)
-1/8 teaspoon salt
-1/3 cup butter, melted
Line
a 9x9 inch glass baking dish with foil and spray with pam. In a bowl, mix together the graham cracker crumbs, sugar and salt. Add
the melted butter and stir until the graham cracker crumbs are moist. Press evenly into the prepared baking dish and
bake at 350 degrees for 10 minutes. Allow to cool completely.
For the Chocolate Layer:
-1/4 cup butter
-1/2 cup smooth peanut butter
-1 cup milk chocolate chips (I mixed milk and semi-sweet and it was delicious.)
-10.5 oz bag marshmallows, minus 1 overflowing cup. (Or 6 cups mini marshmallows)
In
a medium pan, melt the butter and peanut butter.
Remove from heat and stir in the chocolate chips. Stir until completely melted. Allow mixture to
cool until you can comfortably place your hand on the
bottom of the pot.
Add
marshmallows and stir to coat. Spread evenly over the graham cracker
crust, then refrigerate until set. Lift out of
the dish using the foil and cut into squares. Store in refrigerator.
