Pest Control Guys.
Let's talk about them.
They're driving me crazy!! Ringing my doorbell all day long. Conversations that go like this:
Me: "I'm not interested. I'm not interested. I'm not interested. I'm. Not. Interested.
(Usually ends in me pretending to hear my phone ringing in the other room or making up some emergency.)
Don't get me wrong, I don't have anything against pest control guys. One summer in college long before I met him, my husband was a pest control guy in Florida. It's just that I don't NEED pest control and I'm not good at being forceful which apparently you have to be to get rid of pest control guys.
In realization of this, I've decided the best thing I can do is invest in a couple dozen racoons and keep them in one of the unfinished bedrooms in our basement.
What do racoons eat anyway?
Next pest control guy that comes my way will be invited downstairs for a looksie at those pests.
Know anybody that sells 'coons?
Why can't they just take a "No thanks" and a couple of peach bars or something??
Peach Crumb Bars
Recipe from Two Peas and their Pod
For the Peach Filling:
-5 cups diced peeled peaches
-2 Tbsp fresh lemon juice
-½ cup flour
-1 teaspoon cornstarch
-1 cup sugar
-¼ teaspoon salt
-½ teaspoon cinnamon
-¼ teaspoon nutmeg
-2 Tbsp fresh lemon juice

For the Crust:
-3 cups flour
-1 cup sugar
-1 teaspoon baking powder
-¼ teaspoon salt
-1/4 teaspoon cinnamon
-1 cup cold butter, cut into small pieces
-1 egg, lightly beaten
-1/2 teaspoon vanilla extract
-1 cup sugar
-1 teaspoon baking powder
-¼ teaspoon salt
-1/4 teaspoon cinnamon
-1 cup cold butter, cut into small pieces
-1 egg, lightly beaten
-1/2 teaspoon vanilla extract
-Cinnamon and sugar-for sprinkling on top
Preheat the oven to 375 degrees F. Line a 9×13-inch baking pan with foil, leaving some extra foil overhang so you can pull the bars out later using the foil. Spray foil with Pam.
For the peach filling- place the diced peaches in a large bowl and
sprinkle with the lemon juice. Mix gently. In a separate bowl whisk
together flour, cornstarch, sugar, salt, cinnamon and nutmeg. Pour over
the peaches and combine. Set aside.
For the dough-in a large bowl whisk together the flour, sugar,
baking powder, salt, and cinnamon. Cut in the butter with a pastry
blender until butter is mixed in, but you still have small chunks. Mix the vanilla and egg together. Add into the flour and butter
mixture and combine. Pat half of this crumbly dough
into the prepared pan.
Spread the peach mixture evenly over the crust. Crumble the
remaining dough over the peach layer. Sprinkle with cinnamon and sugar.
Bake 40-45 minutes, or until the top is golden brown. Cool completely in pan. Remove bars from pan using foil overhang. Peel down foil on all sides, use a sharp knife to cut into squares to serve. Store in the refrigerator.
I like these best warmed up in the microwave and served with a scoop of vanilla bean ice cream!

This looks delish! I am finally getting an appetite back. #1 craving... dessert! Ok seriously, if you do not have a little peep hole thing on your door, invest in one. Then you never have to answer the door! Well unless it's someone you actually want to see :)
Ha, Tim keeps telling me he should just put a peephole in. The problem is the kids beeline for the door if it rings so it's reaaaaally hard to pretend not to be home. ;)
I hate when they keep coming to the door even though you say no! So annoying. I bet they smell these bars and just want you to give them some. :)
