Cotton Candy Cupcakes


So I tripped over a dead body laying in my hall last night.  And then again about ten minutes later, and ten minutes after that the dead body zombie-chased me through the house while I screamed bloody murder and attempted to run away.

I will probably think twice before buying my 4 year old "body pajamas" again.


If I had a mom who made me cotton candy cupcakes I would not zombie stalk her.

Just sayin...



I made these cotton candy cupcakes a couple months ago right as the Lorax craze began.  These certainly have nothing to do with truffula trees as much as they might look like it, so I decided to wait to post them.  The cupcakes have cotton candy sandwiched inside them before baking (it melts into the batter as they bake) and are topped with a sugary cotton candy frosting.  These definitely make kids' eyes light up.

And keep zombies at  bay.

Cotton Candy Cupcakes

-1 box white cake mix & the ingredients to make it (use whole eggs)
-1/2 tsp cotton candy candy flavoring oil (I am not in love with LorAnn's version so if you can find another brand, try that)
-2 tubs store bought cotton candy (Walmart usually has them for $1 each )

Prepare cake mix according to package directions, and using whole eggs (not whites).  Before pouring into liners, add the cotton candy oil and mix until combined.

Put liners into 2 cupcake pans and fill each liner halfway full of batter.  Add a nice chunk of cotton candy right in the middle of the batter. 

Fill liners the rest of the way with batter over the top of the cotton candy. 

Bake according to box directions and allow to cool completely on a wire rack.



Cotton Candy Frosting

-1 cup butter, softened (I like to use 1 stick salted, 1 stick unsalted, but you can use all unsalted and add a pinch of salt if needed)
-1 (7 oz) jar marshmallow creme
-2 cups powdered sugar
-1 tsp cotton candy flavoring oil
-Wilton blue food coloring
-Blue granulated sugar (found by the sprinkles at Hobby Lobby or other craft stores)





Cream the butter until light and fluffy.  Add marshmallow cream and whip for 2 minutes.

Add powdered sugar and beat for 2 minutes longer.

Add cotton candy flavoring (measure over the sink or with a dropper so your candy flavoring doesn't spill everywhere and overwhelm your frosting!).

Add blue food coloring. (If using the paste, use a toothpick to dab a small amount into frosting.  Mix.  Add more until desired color is reached.)

Spoon frosting into a piping bag and cut off a small/medium sized hole at the end for your tip.  Pipe frosting around the outer edge of each cupcake.  Immediately dip into a bowl of blue sugar granules.  Repeat for each cupcake.

Fill in the rest of the cupcake tops with spirals of frosting.

Top with a piece of cotton candy *right* before serving.  (The cotton candy will melt away from the moisture in the frosting so literally do this immediately before serving or they will get all shriveled and freakish-looking.)
