I've been making Cadbury mini egg cookies for a few years now, but have never found the "right" chocolate cookie recipe to pair them with.
This is it!
I used a Wilton whoopie pan to bake these in thick uniform circles (this method is an OCD person's dream) and just pressed Cadbury eggs on top of the dough before baking.
I also made a sprinkle version that uses chocolate chips in the dough and is super cute for a birthday or any time you can't find Cadbury eggs at the store.

Yes, apparently I am a seventh grade boy and like to send bullying passive-aggressive messages via coughing.
Anyway, this is a super double chocolate cookie any time of year and with any topping. Mix and match with M&Ms, sprinkles, anything you like.
Because I wanted the Cadbury eggs to really shine, I omitted the chocolate chips for my Cadbury cookies. If you want a super chocolatey cookie, and don't care about being a purist, you can add about a cup of the chocolate chips into the dough before pressing into the pans and before adding Cadbury eggs.
These are best within the first few hours after baking, but are fine a few days later. They tend to dry out a bit, and the chocolate is best melted, so feel free to pop one in the microwave for a few seconds before eating.
Or, of course, I will not judge you if you try to eat them all right out of the oven.

Cadbury Mini Egg Cookies
Adapted from Double Chocolate Cookie recipe from Love From the Oven
-2 sticks cold butter, cubed
-1¼ cup sugar
-2 large eggs
-½ cup dark cocoa powder (or dutch-processed)
-2¼ cups all-purpose flour (11.25 oz)
-pinch of salt
-1 tsp baking powder
-2 cups semi-sweet chocolate chips for sprinkle version OR 1 (10 oz) bag Cadbury mini Eggs for Cadbury version
Preheat oven to 350˚ F. Combine butter and sugar in an electric mixer and beat until light and fluffy.
Add eggs, one at a time, scraping down the bowl after each. Mix in cocoa powder until well combined.
Add flour, salt, and baking powder, mixing just until combined.
For a birthday version, add 2 cups chocolate chips to dough. For Cadbury version, continue to next step or add 1 cup chocolate chips if desired.
Using clean hands, press dough evenly into each circle of a whoopie pan, about 2/3 full. Dough is sticky so it may help to spray a little Pam on your fingers.
For Cadbury version- press 5 or 6 Cadbury mini eggs into the dough of each round, pushing almost all the way down. (Yes, I know mine only have 4...)
For birthday version, top with sprinkles instead of mini eggs and press lightly into dough.
Bake at 350 degrees for 10 minutes. Allow cookies to sit in pan for 8 to 10 minutes after removing from oven. Use a small plastic spatula to remove cookies and cool on a wire rack. Best eaten warm.
Try not to inhale.
