Lest you think all I eat is sugar...
I'm pretty sure I had this for lunch the other day.
Garlic Artichoke Dip
Recipe from Our Best Bites
-1 (8 ounce) pkg. cream cheese
-1/2 cup mayonnaise
-1/2 cup packed shredded parmesan
-6 ounces *marinated* artichoke hearts (These are usually sold in 12 ounce bottles, so just use half)
-3 large cloves garlic
Preheat your oven to 350, then drain and chop your artichoke hearts. I don't like huge chunks of vegetable in my dip (I have a vegetable thing) so I do mine fairly small. You can mince your garlic on the same cutting board afterwards.
In a medium bowl mix the cream cheese, mayo, and parmesan very well. Gently stir in the garlic and artichokes.
Put in a small baking dish (I did 3 individual-sized Ramekins but anything is fine). Bake for 25-30 minutes or until brown and bubbly on top. Serve with bread or tortilla chips.
This recipe is easily doubled for a larger crowd and can be baked in a pie plate.
