Strawberry Glaze
Have you ever experienced mommy guilt? I don't mean the "my kid is cooler than yours because he is fluent in spanish, mandarin, and cantonese, and plays the violin, and donates all his lemonade stand earnings to the humane society, and got invited to six birthday parties this month. I mean the big knot in your stomach that won't go away because you know what you did (as a mom) was bad. Really really bad.
If you want to feel like mother of the year, let your child get a sunburn. A really really bad sunburn. A sunburn that causes huge blisters and massive strips of peeling skin, and calls for half a bottle of aloe with lidocaine. The kind that leaves you with a crying child who refuses to wear clothes for a week because they hurt, is freezing all the time, and can't sleep at night. The very worst mommy guilt comes from knowing there's not a thing in the world you can do to fix what you did.
Therefore I bake. Admittedly, I made these strawberry glazed donuts to win back the affections of my eldest. Because his burn was without a doubt, 100%, totally my. fault.
Just so you know... They worked. He loves me again. His burn is almost healed. And the tiny pieces of my heart are starting to come back together again.
The donuts really weren't that great. (Shhh don't tell Chase) But the glaze was awesome. You can put it on your own homemade donuts (or even drizzle it on storebought plain donuts- definitely considered that one). You can use it between layers of a cake, drizzle it on sweet bread, pretty much anything you want. Making it might even erase some of your mommy guilt.
Strawberry glaze
2/3 cup strawberries
½ cup butter 1 tbsp vanilla extract
2 ½ cups powdered sugar
Puree strawberries. Melt butter in a small saucepan then add vanilla and powdered sugar. Add strawberries and whisk together until smooth. If the glaze is too thick add up to 1/4 cup hot water.
*If using as a cake filling where you are also using a sweet frosting, you may want to cut down on the powdered sugar a bit. 2 cups should suffice. For a thick spreadable glaze, combine 1 tbsp cornstarch with 1 tbsp very cold water in a small bowl. Whisk together immediately then add to your strawberry glaze. Bring to a boil for 2 minutes, then remove from heat and allow to cool before use.
