Raspberry Lemonade Slushies

These beauties are one of our new favorite drinks. They go wonderfully with anything from the grill and are a great summer cool-off drink. Tangy and tart with just enough sweet. So yummy.

Raspberry Citrus Slushies
Recipe by Our Best Bites

3/4 C sugar
3/4 C water

1/2 C raspberries (frozen works)
2 T powdered sugar (more if needed)
2 T water
2/3 C fresh orange juice (Simply Orange works great too)
3/4 C fresh lemon juice (4-6 lemons)

4 1/2 C ice
Ahead of time:

-Mix the 3/4 C water and 3/4 C granulated sugar in a cup or bowl and stir until sugar is dissolved. Store in fridge.

-Place raspberries, powdered sugar, and 2 T water in a food processor and blend until smooth. Taste and add a little more powdered sugar if it is too tart. Run the mixture through a strainer to remove seeds. Use a rubber spatula to stir and press slightly and the puree will fall right through. Store in fridge.
-Juice your citrus, mix together, and store in fridge.

To assemble drinks:

-Place your ice cubes in a blender. Pour your juice over it. Then add 3/4 cup of the sugar-water solution. Process until slushy. You may need a little more sugar syrup to thin it, or more ice to thicken it up.

-Put a tablespoon or two of raspberry puree into the bottom of each glass you are going to assemble. Spoon the slushy mix on top. Garnish with raspberries.

This recipe makes 4-6 glasses of slush. If you have leftovers, mix the raspberry puree and slush together well, and pour into popsicle molds. Insert sticks and wait 4 hours to enjoy. Now you have yummy raspberry lemonade popsicles.

Enjoy!
