Cherry Cordial Cookies

I had this long debate over whether to post these cookies or not. I finally decided they could make an appearance but only with a disclaimer, and here it is: These must be eaten warm. They are delicious out of the oven. But when cool... I don't know, the texture of the cherry is just strange or something. Invite some friends over. Have a party. Just make sure they all get eaten.


Cherry Cordial Cookies
Recipe by: Eagle Brand

Dough:
1 1/4 sticks butter, softened (or 10 Tbsp)
1 1/3 cups sugar
1 egg
1 1/2 tsp vanilla

1 3/4 cups flour
6 Tbsp unsweetened cocoa
1/4 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt (or a pinch)
6 ounce jar maraschino cherries

Frosting:
1/2 cup semi-sweet chocolate chips
1/2 cup Eagle Brand sweetened condensed milk


Preheat your oven to 350 degrees. Drain your cherries, remove the stems, and lay them on a paper towel to dry a little.

Beat butter and sugar together until fluffy, then add egg and vanilla and mix well.

Whisk together dry ingredients, then stir into butter mixture.

Take a small piece of dough, press flat and wrap around a maraschino cherry, making sure to seal well. Roll it between your hands to form a well-shaped ball. Each cookie should be about 1 inch. You don't want them too big (promise!)

Bake on an ungreased baking sheet for 8 minutes. Move them to cooling racks immediately.

To make the frosting, melt the chocolate chips with the condensed milk over medium heat on the stove. Cook about 3 minutes, remove from heat, and let cool slightly. While still warm, spoon frosting into a ziploc bag. Cut off tip, and drizzle across each cookie. Or just place a big dollop on each cookie. Eat while warm.

(Pretend you don't notice my hand looks like a freaky claw or something. I was cursed with weird looking hands)
